Lebkuchen cookies are a cherished German Christmas tradition dating back to the 13th century. Spiced with cinnamon, cloves, and cardamom, and sweetened with honey, these soft, chewy cookies only get better with age.

Ingredients
  

  • 4 cups all-purpose flour
  • 2/3 cup honey
  • 1/2 cup brown sugar
  • 2 eggs large
  • 7 tbsp butter softened
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground allspice
  • - zest of 1 lemon
  • - zest of 1 orange
  • 1/3 cup candied orange peel finely chopped
  • 1/2 cup almonds finely ground
For the Glaze
  • 1-2/3 cups powdered sugar
  • 3-4 tbsp milk or lemon juice
  • 1 tsp vanilla extract

Method
 

Preparing the Dough
  1. In a small saucepan, gently warm the honey until it becomes liquid and fragrant. Remove from heat and let cool slightly.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the warm honey until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and all the spices (cinnamon, cloves, nutmeg, ginger, cardamom, allspice).
  5. Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
  6. Fold in the lemon zest, orange zest, candied orange peel, and ground almonds.
  7. Wrap the dough in plastic wrap and refrigerate for at least 2 hours, or overnight. This helps the flavors meld and makes the dough easier to work with.
Baking
  1. Preheat your oven to 180°C (350°F). Line baking sheets with parchment paper.
  2. On a lightly floured surface, roll the chilled dough to about 8mm (1/3 inch) thickness.
  3. Cut into traditional shapes using cookie cutters – hearts, stars, or rectangles are most common.
  4. Place cookies on prepared baking sheets, leaving space between each one.
  5. Bake for 12-15 minutes, until the edges are lightly golden but the centers still feel slightly soft.
  6. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Glazing
  1. While cookies are cooling, prepare the glaze by whisking together powdered sugar, milk (or lemon juice), and vanilla until smooth.
  2. Once cookies are completely cool, brush or drizzle with glaze.
  3. Allow glaze to set for at least 30 minutes before serving or storing.
